Pumpkin Cream Cheese Cookies

A soft pumpkin cookie with the perfect cream cheese icing to celebrate your fall mood!

Cookie
- 1 cup white sugar
- 1 egg
- 1 cup shortening
- 1 tsp. vanilla
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1 cup canned pumpkin
Icing
- 8 oz Cream cheese
- 2 TBS butter
- 1 cup confectioner sugar
- 1 TBS vanilla
Preheat oven to 350 degrees F (175 degrees C).
Grease cookie sheets.
In a large bowl, cream together sugar, egg, shortening, and vanilla.
Sift together flour, baking soda, baking powder, salt, and cinnamon;
Stir the dry mixture into the creamed mixture.
Add the pumpkin filling.
Drop dough by teaspoonfuls onto the prepared cookie sheets.
Bake 10-15 minutes in the preheated oven.
While cookies are baking, mix together all of the icing ingredients until smooth.
Allow cookies to cool slightly before icing them. (Although... they are VERY tasty while warm!)
